Very difficult to describe. Spam is far more fatty and not nearly as flavorful. To picture it, you might maybe could think of pork roll as a cross between spam and lebanon balogna. Pork roll is often served in delis as a sandwich, lightly fried in a skillet, with onions and mustard on rye or maybe a salt bagel. Pork roll has gone by many names, such as Taylor Pork Roll, Taylor Ham, etc. Used to be exclusively Northeast, even more so, specific to NJ. You can actually order it over the Internet now and many Kroger superstores nationwide now carry it in the Deli section.
Pastrami is another fave. Jason's Deli makes a great pastrami sammy, although none ever as good as the delis in NYC.
